From Curry Curator to Fusion Innovator
Noreen’s culinary journey began with Inland Curry, a humble takeout pop-up that introduced Spokane to the rich, regional flavors of India. She didn’t just cook curry—she taught people what curry really is (and isn’t). Her menus rotated weekly to spotlight different Indian states, sparking curiosity and conversation around every dish.
But her creative fire didn’t stop there.
Enter Indicana, Spokane’s wildly popular Indian-Mexican fusion restaurant, co-founded with Chip Overstreet (former CEO of Spiceology). This vibrant spot—voted Best New Restaurant of 2025—brings naan tacos, tamarind ribs, banana-leaf salmon, and mango enchiladas to the table. With its inclusive menu (vegetarian, vegan, gluten-free, and kid-friendly), Indicana isn’t just a restaurant—it’s an experience, layered with flavor and heart.

When she’s not curating menus, Noreen is capturing them. Through her food photography business and her earlier platform Picture the Recipe, she crafts visually stunning stories that elevate plates to art.
